Founded in 2011, Ramen Kouji is Macao’s first specialty restaurant dedicated to Japanese ramen. The brand insists on using high-quality pork bones and fresh ingredients, simmering its rich, full-bodied house soup base for long hours. Paired with springy handmade noodles, tender chashu, and secret sauces, all within an izakaya-inspired Japanese setting, Ramen Kouji has become a popular choice for diners seeking authentic Japanese ramen.
Ramen Kouji offers a wide range of signature items, including yatai shoyu ramen, tonkotsu gyokai tsukemen, Japanese gyoza, and charcoal-grilled beef don. It also created the original “One-Strand Noodle,” a visually striking dish featuring a noodle several meters long, with a firm yet smooth texture. At the same time, Ramen Kouji was the first restaurant in Macao to introduce authentic Japanese tsukemen, offering a layered tasting experience through the contrast of cold noodles and hot dipping broth.
The founding team has more than ten years of experience studying Japanese ramen and travels to Japan every year for research and exchange with experienced ramen masters. The soup base combines a secret recipe with natural dried ingredients from three regions. After more than ten rounds of adjustment, the team established its ideal golden ratio. Standardized kitchen procedures and training systems are also in place to ensure that every customer can enjoy authentic Japanese ramen. From traditional ramen to the creative “One-Strand Noodle,” Ramen Kouji continues to bring genuine Japanese flavors to Macao diners through dedication and innovation.
